Because we never know what to do differently with our overly swarthy bananas, voici la AhhhBanananahhh. A soft and nourishing recipe that makes us want to say "yum! "with every bite. It tastes a little bit like banana bread, but we like it in a patty. A source of fibre and yummy! Smooth, surprising and intoxicating, galette AhhBananahhh is a good source of fibre and tasty energy. Who says you should always make a banana bread with the bananas sleeping on the counter? Yum, yum, yum, yum, yum, yum, yum... ahhhhhBanananahhhh!
Ingredients
  • 150 g (1/2 cup) Mrs. Labriski's Date Purée
  • 150 g (1/2 cup) plain fat-free yogurt (or 2%, if desired) or unsweetened applesauce
  • 1 ripe banana, crushed
  • 1 egg
  • 1 tablespoon (15 ml) vanilla extract
  • 1/2 tablespoon (7.5 ml) baking powder
  • 1/2 teaspoon (2.5 ml) baking soda
  • A pinch of salt
  • 180 g (1 1/2 cups) whole wheat, whole spelt or other flour
  • 30 g (1/4 cup) crushed flax seeds
  • 80 g (1/2 cup) unsalted sunflower seeds
  • 90 g (1/2 cup) dark chocolate chips (75% or more)
Place in a bowl and mix well: date purée, yogurt, egg, crushed ripe banana and vanilla extract. Labriski Tip! - Even if I didn't make it up - How can I maximize the taste of its banana? Excellent question. To learn more, check out the Good Morning Banana recipe at the bottom of the page! Add baking powder, baking soda and salt. Wait a few moments (30 seconds) and mix well. While stirring, gradually incorporate the flour of your choice, then the flax seeds, sunflower seeds and finally the chocolate chips. I'm telling you right away: the dough will smell great... ahhhh the bananahhhhh. Put a silicone mat on the baking sheet or parchment paper. As there is no trace of fat on the baking sheet, if you don't put anything on it: EVERYTHING WILL Stick! And who likes to spend time rubbing their pancake plates? Take two teaspoons or tablespoons (to taste) and put the dough on the baking sheet to make nice patties. Bake in the oven for 15 minutes at the temperature indicated above and... once the pancakes have cooled down, you'll be delighted.
