Bye-bye banana bread. Here's the apple bread! With its fall flavours, you'll be saluting the banana to make way for the favourite fruit of the fall!
  • 1 1/2 cups all-purpose flour
  • 1/2 cup oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon of salt
  • 2 teaspoons ground cinnamon
  • 1 cup unsweetened or homemade applesauce
  • 1/4 cup of vegetable milk
  • 2 tablespoons of vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup
  • 1 apple, diced
  • 1/2 cup coarsely chopped pecans
Preheat the oven to 350F. Grease and flour a loaf pan or line it with parchment paper. Set aside. In bowl, combine flour, oats, baking powder, baking soda, se and cinnamon. Set aside. In a second bowl, combine applesauce, milk, vanilla, oil, brown sugar and maple syrup. Mix well. Add dry mixture to wet ingredients and whisk well. Using a spatula, fold in apple cubes and pecans. Transfer the dough to the loaf pan and bake for about 50 minutes for a traditional oven and about 1 hour and 15 minutes for a convection oven. The bread is baked when a toothpick inserted in the centre comes out dry. Leave to temper and then remove from the mould.
