Strawberry and feta bruschetta

These bites made with fresh strawberries, feta, walnuts and a touch of mint will be perfect to serve as an aperitif or starter, in addition to being obviously delicious!

Freeze for three months.

  • Ingredients

    • 1 baguette cut into 1 cm thick slices
    • 60 ml (¼ cup) + 30 ml (2 tbsp) olive oil
    • 500 ml (2 cups) chopped fresh strawberries
    • 125 ml (½ cup) coarsely crumbled feta
    • ½ small red onion, finely chopped
    • 2 stalks of chopped celery
    • 125 ml (½ cup) chopped walnuts
    • 30 ml (2 tbsp) chopped fresh mint
    • Salt and pepper from the mill to taste
  • Preparation

    1. Preheat oven to 400F.
    2. Cut the baguette into 1 cm thick slices. Place on a non-stick baking sheet and brush with olive oil on both sides. Add pepper to taste.
    3. Bake for 20 minutes or until croutons are lightly browned. Set aside. In a large bowl, mix all remaining ingredients and serve over croutons.

Add a cup of arugula and drizzle with balsamic caramel when serving.
