  • Ingredients

    • 500g chicken, cut into strips
    • 4 wheat tortillas
    • 2 cups shredded Tex-Mex cheese
    • 4 peppers (mixed colors), cut into strips
    • 1 cup salsa
    • 1/2 cup sour cream
    • 2-3 tablespoons fajita spice mix
    • 1 bunch fresh coriander, chopped
    • 2 tablespoons olive oil
  • Preparation

    1. Season the chicken strips with the fajita spice mix.
    2. Heat oil in a skillet over medium-high heat.
    3. Cook chicken for 15-20 minutes until cooked through.
    4. While cooking, cut the peppers into strips.
    5. Grate cheese if necessary.
    6. Chop the fresh coriander.
    7. Use compartmentalized containers.
    8. Place the cooled chicken in the larger compartment.
    9. Divide the grated cheese into a compartment.
    10. Add the pepper strips to another compartment.
    11. Place salsa and sour cream in small airtight containers.
    12. Wrap tortillas separately in foil or wax paper.
