Almond Falafel
Ingredients
- 2 cups (500 mL) rinsed and drained chickpeas
- 1 egg
- ½ cup (125 mL) ground almonds
- 2 minced garlic cloves
- 1 C. (5 ml) ground cumin
- 1 C. (5 ml) turmeric
- 1 C. 1/2 tsp (5 mL) ground coriander
- Salt and ground pepper to taste
- ¼ cup (60ml) flour
- ¼ cup (60ml) vegetable oil
- ½ cup (125 ml) sour cream
- 4 lemon wedges
- 4 pita breads
Preparation
- Place all ingredients in a food processor, except flour, oil and toppings.
- Blend until smooth. Adjust with liquid as needed.
- Using a spoon, form balls about 2 cm in diameter.
- On a plate, spread the flour and coat each meatball.
- In a large skillet, heat the oil and cook the falafels on all sides until golden brown, about 5 minutes.
- Serve with sour cream, lemon wedges and pita bread.
For adventurers:
Add ¼ cup (60 mL) sunflower seeds and 1 egg to the chickpea mixture.
