Pulled pork grilled cheese for lunchbox

A comforting and gourmet lunch! The classic grilled cheese reinvented with tender and flavorful pulled pork, served with crunchy pickles.

    • Ingredients

      • 8 slices of sandwich bread
      • 2 cups pulled pork
      • 8 slices cheddar cheese
      • ¼ cup butter
      • 1 cup coleslaw (homemade or store-bought)
      • 8 dill pickles
    • Preparation

      1. Lightly butter the outside of the bread slices.
      2. Spread the pulled pork over 4 slices of bread.
      3. Add the cheese on top of the pork.
      4. Close with the other slices of bread, buttered side facing out.
      5. Cook the sandwiches in a pan over medium heat until golden brown and the cheese is melted.
      6. Let cool slightly and cut in half.
      7. Place the half-sandwiches in the main compartment of the containers.
      8. Add the coleslaw and pickles to the secondary compartment.

    Notes and tips

    Use leftover pulled pork or prepare it specifically for this recipe.
    These sandwiches are delicious cold, but can also be reheated.
    For a more flavorful version, add a thin layer of Dijon mustard.
    Pulled pork freezes very well in individual portions.
    The secret to a good grilled cheese: cook over medium heat so that the cheese melts without the bread burning.
