Cranberry Breads

This moist bread combines the sweetness of ripe bananas and chocolate with the crunch of chia seeds and the tangy touch of cranberries. Baked in an air fryer, this bread offers a golden crust and a tender interior, ideal for a nutritious breakfast or a gourmet break at any time.

  • Ingredients

    • 1 cup all-purpose flour
    • 2 tbsp ground chia seeds
    • 1 tsp baking powder
    • ¼ tsp baking soda
    • ¼ cup butter, at room temperature
    • ¼ cup sugar
    • 1 egg
    • 1 large ripe banana, mashed
    • ¼ cup milk
    • ¾ cup frozen cranberries
    • ¼ cup chocolate chips
    • 3 mini loaf pans, approximately 5 inches x 3 inches
  • Preparation

    1. In a bowl, mix the flour, chia seeds, baking powder and baking soda. Set aside.
    2. In a large bowl, using an electric mixer, cream the butter and sugar for 1 minute. Add the egg and banana and mix for another minute.
    3. Add milk and flour mixture. Mix until smooth.
    4. Stir in cranberries and chocolate chips.
    5. Preheat the air fryer to 325F.
    6. Pour into the molds, place the molds in the bottom of the air fryer basket and cook for 25 minutes or until a toothpick inserted in the center of the loaves comes out clean.

      Please note that the time may vary depending on your type of air fryer. Reduce or extend the cooking time depending on the desired results.
