  • Ingredients

    • 3 large potatoes with skin, washed and cut into large cubes
    • 3 tbsp olive oil
    • 1 tbsp smoked paprika
    • Salt and pepper from the mill
    • 1 can of black beans, rinsed and drained
    • ½ cup corn kernels
    • 1 red pepper, chopped
    • 1 small yellow onion, chopped
    • 1 cup salsa

    For service:

    • 1 cup Tex-Mex style shredded cheese
    • ¼ cup chopped fresh cilantro
  • Preparation

    1. In a large bowl, combine potato cubes, olive oil, paprika, salt and pepper.
    2. Preheat the air fryer to 400F.
    3. Bake for about 20 minutes or until potatoes are almost done.
    4. Add all other ingredients except cheese, mix well and cook for another 5 minutes.
