Pepperoni tortilla roll-ups for lunchboxes

A colorful and fun lunch! Tortillas filled with creamy cheese, pepperoni, and vegetables, rolled and then cut into tasty bites.

  • Ingredients

    • 4 large tortillas
    • 250g cream cheese
    • ¼ cup sour cream
    • ¼ cup pizza sauce
    • 200g sliced pepperoni
    • 2 bell peppers (yellow and orange), cut into strips
    • 1 cup chopped romaine lettuce or spinach
    • 1 cup shredded cheese
  • Preparation

    1. Combine cream cheese, sour cream, and pizza sauce.
    2. Spread the mixture evenly over the tortillas.
    3. Arrange pepperoni slices over the mixture.
    4. Add bell pepper strips and shredded lettuce.
    5. Sprinkle with shredded cheese.
    6. Roll each tortilla tightly to form a cylinder.
    7. Refrigerate for 30 minutes to firm up, if possible.
    8. Cut each roll into 6-8 slices.
    9. Place the bites into containers.
    10. Add some fresh bell pepper strips as a side.
