Lemony Chicken Pasta Salad for the Lunch Box

  • Ingredients

    • 450g short pasta (farfalle or penne)
    • 2 chicken breasts
    • 2 lemons
    • 1/4 cup olive oil
    • 2 cloves garlic, chopped
    • 1/2 cup fresh parsley, chopped
    • 1/4 cup fresh basil, chopped
    • 1/2 cup grated parmesan cheese
    • 2 cucumbers, sliced
    • Salt and pepper to taste
  • Preparation

    -Marinate the chicken in the juice of a lemon, oil and garlic (30 minutes minimum)

    -Grill the chicken and cut it into pieces

    -Cook the pasta al dente, cool

    -Mix pasta, chicken, herbs and parmesan

    - Season with olive oil and lemon juice

    -Distribute into containers

    -Add the lemon wedges

    -Put the cucumbers aside
