Tomato and bocconcini salad
Ingredients
- 1½ cups (375 ml) pasta
- 2 cups (500 mL) halved cherry tomatoes
- 1 cup (250 mL) drained bocconcini pearls
- 2 celery stalks chopped
- 2 tbsp. (30 ml) chopped fresh basil
- ¼ cup (60ml) olive oil
- 3 tbsp. (45 ml) balsamic vinegar
- Salt and pepper from the mill
Preparation
- In a large pot, bring water to a boil and cook pasta according to manufacturer's directions. Drain well.
- In a large bowl, combine all the salad ingredients.
- Place in airtight containers.

Add ½ cup (125 mL) chopped walnuts
