Beef and boursin sandwich for lunchbox
A gourmet sandwich for lunch! Tender roast beef and creamy Boursin cheese on a ciabatta roll, with a touch of fresh greens.

Ingredients
- 4 ciabatta buns
- 400g thinly sliced roast beef
- 1 container (150g) Boursin cheese with herbs
- 1 cup watercress or arugula
- Salt and pepper to taste
- 2 cups snap peas (for serving)

Preparation
- Slice the ciabatta buns in half horizontally.
- Spread Boursin cheese on both inside halves of the bun.
- Arrange the roast beef on the bottom half.
- Add watercress or arugula on top.
- Season lightly with salt and pepper if desired.
- Close with the top half of the bun.
- Cut the sandwiches in half.
- Place the sandwich halves in the main compartment of the containers.
- Add the snap peas to the side compartment.
