Curried chicken sandwich for lunchbox

A reinvented sandwich with an Indian twist! Curried chicken salad, served in a hamburger bun with a fresh lettuce garnish.

  • Ingredients

    • 4 hamburger buns
    • 2 cups cooked chicken, shredded
    • ½ cup mayonnaise
    • 2 tsp curry powder
    • ¼ cup apple, finely diced (optional)
    • ¼ cup raisins (optional)
    • 1 stalk celery, finely chopped
    • 8 lettuce leaves
    • Salt and pepper to taste
  • Preparation

    1. Mix the shredded chicken with mayonnaise in a bowl.
    2. Stir in the curry powder, apple, raisins, and celery.
    3. Season with salt and pepper to taste.
    4. Cut the hamburger buns in half.
    5. Arrange lettuce leaves on each bottom half of the bun.
    6. Spread the chicken salad over the lettuce.
    7. Cover with the top half of the bun.
    8. Cut the sandwiches in half if desired.
    9. Place the sandwiches in airtight containers.

Notes and tips

Use leftover roast chicken or chicken cooked specifically for this recipe.
Curried chicken salad will keep for 3 days in the refrigerator.
For extra flavour, add a little mango chutney to the mixture.
Hamburger buns can be replaced with pita bread or croissants.
Ideal for preparing the day before for the next day's lunches.
