Beef Banh Mi Sandwich for Lunch Box
A Vietnamese sandwich that combines tender beef with crunchy marinated vegetables, topped with Asian mayonnaise and fresh coriander.

Ingredients
- 4 Vietnamese baguettes
- 500g thinly sliced beef
- 2 carrots, julienned
- 1 cucumber, julienned
- 1 bunch of coriander
- 4 tablespoons mayonnaise
- 2 tablespoons sriracha sauce
- 2 tablespoons soy sauce
- 1/2 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt

Preparation
-In a bowl, mix vinegar, sugar and salt. Add the julienned vegetables and marinate for at least 30 minutes.
-Grill the beef with the soy sauce
-Mix mayonnaise and sriracha
-Cut the baguettes lengthwise
-Garnish with beef
-Distribute into containers
-Put the marinated vegetables and coriander in separate containers.
-Serve the spicy mayo separately
