  • Ingredients

    2 tbsp olive oil
    ½ cup chopped red pepper
    ½ cup chopped yellow pepper
    ½ cup chopped leek
    ½ cup chopped kale
    8 cups vegetable broth
    ¾ cup parboiled white rice
    1½ cups black beans
    2 tbsp vegetable spices

  • Preparation

    In a large saucepan, heat the olive oil and cook the vegetables for 5 minutes.
    Add remaining ingredients and simmer, uncovered, for 10 minutes or until all ingredients are tender.
