Beef Taquitos for Lunchbox
A crispy Mexican lunch! Rolled tortillas filled with seasoned beef, baked until golden, then served with fresh and colorful sides.

Ingredients
- 8 medium-sized tortillas
- 2 cups cooked ground beef or cooked beef strips
- 1 cup shredded cheese (Tex-Mex blend)
- ½ cup onion, finely chopped
- 2 tbsp taco seasoning
- 2 tbsp olive oil
- 1 cup salsa
- 2 cups tortilla chips
- 2 limes
- ½ cup fresh cilantro

Preparation
- Preheat oven to 425°F (220°C).
- Combine ground beef with taco seasoning and onion.
- Divide beef mixture evenly among tortillas.
- Sprinkle with shredded cheese.
- Roll tortillas up tightly and place on a baking sheet.
- Brush each rolled tortilla with olive oil.
- Bake for 12-15 minutes until golden brown and crispy.
- Let cool before cutting in half.
- Place taquitos in the main compartment of the containers.
- Add tortilla chips to a separate compartment.
- Place salsa in small airtight containers.
- Garnish with lime wedges and fresh cilantro.
