
Chili Pie
Combine a flavorful chili made with ground beef, black beans, and corn with a pie crust, and you have a delicious chili pie that's perfect for freezing on busy nights!

Ingredients
- 1 tbsp olive oil
- 250g lean ground beef
- 1 chopped yellow onion
- 2 tsp chili powder (optional)
- Salt and pepper from the mill
- 1 can (540 ml) black beans, rinsed and drained
- ¾ cup chili sauce
- 1 cup frozen corn kernels, thawed
- 4 9-inch pie crusts
- 1 beaten egg

Preparation
- Preheat oven to 375F.
- In a large skillet, heat olive oil over medium-high heat and cook ground beef, onion, and chili powder for 5 minutes, making sure to break up the meat well. Season with salt and pepper to taste.
- Stir in beans, chili sauce and corn. Mix well.
- Line two 9-inch (23 cm) pie plates with two pie crusts and fill with beef mixture. Top with the remaining two pie crusts and press well around the edges with your fingers or a fork to ensure a good seal.
- Brush the tarts with beaten egg and place in the oven for 25 minutes or until the tarts are golden brown.
