  • Ingredients

    • 45 ml (3 tbsp) olive oil
    • 450 g (1 lb) chicken thighs, cut into 2 cm x 2 cm cubes
    • 1 chopped yellow onion
    • 2 cloves garlic, chopped
    • 1 red pepper, roughly chopped
    • 1 large sweet potato cut into small cubes of 1 cm x 1 cm
    • 1 can (540 ml) white beans, rinsed and drained
    • 500 ml (2 cups) vegetable broth
    • 15 ml (1 tbsp) Dijon mustard
    • Salt and pepper from the mill
  • Preparation

    1. In a saucepan, heat oil over medium-high heat and cook chicken, onion, garlic and bell pepper for 2 minutes. Stir in sweet potato, beans, chicken broth and Dijon mustard. Season with salt and pepper.
    2. Cover and cook for 30 minutes over medium heat, stirring occasionally.
