Potato salad with dill
Ingredients
- 10 to 12 small red potatoes with skin, cut into small dice of 1 cm x 1 cm
- 60 ml (¼ cup) olive oil
- Zest and juice of one lemon
- 250 ml (1 cup) crumbled cooked bacon
- 1 chopped red pepper
- 2 chopped green onions
- 250 ml (1 cup) grated fresh parmesan
- 60 ml (¼ cup) fresh dill, chopped
- Salt and pepper from the mill
Path to follow
- In a large cauldron, place the potatoes and a little salt. Cover with water and bring to a boil. Bake 15 minutes or until potatoes are tender.
- Drain and let stand 2 or 3 minutes. (Potatoes will release steam and absorb moist recipe ingredients more easily.)
- Place the potatoes in a large bowl. Add remaining ingredients and mix well.
For adventurers
Replace the parmesan with 500 ml (1 cup) of smoked gouda, cut into small cubes.
