Beef - vegetables - croutons

Ingredients
- 4 tbsp. (60ml) olive oil
- 450 g (1 lb) lean ground beef
- 1 small red onion chopped
- 1 large can diced tomatoes, drained
- 1 cup (250 mL) frozen peas
- 2 minced garlic cloves
- Salt and pepper
- 6 slices of country bread, cut into 2cm x 2cm dice
- 1 C. (15 mL) dried basil
- Salt and ground pepper to taste
Preparation
- Preheat the oven to 400°F.
- In a skillet, heat 1 tbsp. (15 ml) of oil and cook the beef and onion for 5 minutes.
- Add the tomatoes, peas and garlic, salt and pepper.
- Place the beef mixture in a rectangular baking dish and set aside.
- In a large bowl, place the bread cubes.
- Drizzle with olive oil, sprinkle with basil, salt and pepper to taste.
- Spread the croutons evenly over the beef.
- Bake for 15 minutes or until the bread is golden brown.
For adventurers:
Add ½ cup (125 mL) crumbled cooked bacon over the croutons.
