  • Ingredients

    • 15 ml (1 tbsp) butter
    • 375 ml (1 ½ cups) all-purpose flour
    • 250 ml (1 cup) quick-cooking oatmeal
    • 30 ml (2 tbsp) ground flax seeds
    • 2.5 ml (½ tsp) ground nutmeg
    • 2.5 ml (½ tsp) baking powder
    • A pinch of salt
    • 2 small apples, peeled and cut into small ½ cm x ½ cm cubes
    • 250 ml (1 cup) unsweetened applesauce
    • 125 ml (½ cup) lightly packed brown sugar
    • 1 egg
    • 60 ml (¼ cup) canola oil
  • Preparation

    1. Preheat oven to 400F.
    2. Butter a rectangular baking dish.
    3. In a bowl, mix together flour, oats, ground flaxseed, nutmeg, baking powder and salt. Set aside.
    4. In another bowl, combine all other ingredients and pour into the bowl of dry ingredients. Mix well.
    5. Place in the pan and bake for 20 minutes or until a toothpick inserted in the center of the mixture comes out clean.

Notes and tips

Add 5 ml (1 tsp) of cardamom and 125 ml (½ cup) of raisins to the mixture.
