Chewy mango, peach and apricot bars

A delicious blend of buckwheat flour, multigrain flakes, flax seeds, soy butter, mango and peach puree and dried apricots, for soft bars that are ideal for the lunch box and can be prepared in just 15 minutes!

Freeze for three months.

  • Ingredients

    • 1½ cups buckwheat flour
    • 6 cups multigrain flakes
    • ½ cup flax seeds
    • 1 tbsp baking powder
    • 1 tsp baking soda
    • 1 cup soy butter
    • 1 cup brown sugar
    • 3 eggs
    • 1½ cups mango and peach puree
    • 1½ cups chopped dried apricots
  • Preparation

    1. Preheat oven to 375F.
    2. In a large bowl, mix together flour, flakes, seeds, baking powder and baking soda. Set aside.
    3. In another bowl, mix all the other ingredients.
    4. Feel free to mix by hand if it is too difficult with a spoon.
    5. Press the mixture into two square pans lined with parchment paper.
    6. Bake for 25 minutes or until golden brown.
    7. Allow to cool, unmold and cut into bars.
