BBQ Chicken Meatballs in Alfredo Sauce

Ground chicken takes center stage in this meatball recipe, adding carrots, red onion, BBQ chip crumbs and serving in a creamy Alfredo sauce for creamy and delicious meatballs!

  • Ingredients

    • 2 tbsp Canola oil
    • ½ cup finely chopped red onion
    • ½ cup grated carrots
    • 1½ lbs ground chicken
    • 1 cup barbecue chip crumbs
    • 2 eggs
    • 1 tbsp dried oregano
    • Salt and pepper to taste
    • 1 liter of Alfredo sauce
  • Preparation

    1. Preheat oven to 375F.
    2. In a large bowl, mix all the meatball ingredients except the fat. Shape into meatballs about 2 tbsp. in size. Set aside.
    3. In a deep ovenproof skillet over medium-high heat, heat the fat and brown the meatballs for 3 minutes, turning them regularly.
    4. Add the sauce and mix well.
    5. Bake for 30 minutes or until meatballs are cooked through.
    6. Feel free to adjust the texture of the meatballs with eggs if your preparation is too dry and by adding breadcrumbs if your preparation is too moist.
