Italian beef meatballs in tomato sauce

These meatballs made from ground beef, grated zucchini and Italian spices freeze perfectly and can be served as a starter or with pasta for a quick dinner that is enjoyed by young and old alike!

Freeze for three months.

  • Ingredients

    • 2 tbsp olive oil
    • ½ cup yellow onion, finely chopped
    • ½ cup grated zucchini
    • 1½ lbs beef
    • 1 cup bread crumbs
    • 2 eggs
    • 1 tbsp Italian spices
    • Salt and pepper to taste
    • 1 liter of tomato sauce
  • Preparation

    1. Preheat oven to 375F.
    2. In a large bowl, mix all the meatball ingredients except the fat. Shape into meatballs about 2 tbsp. in size. Set aside.
    3. In a deep ovenproof skillet over medium-high heat, heat the fat and brown the meatballs for 3 minutes, turning them regularly.
    4. Add the sauce and mix well.
    5. Bake for 30 minutes or until meatballs are cooked through.
    6. Feel free to adjust the texture of the meatballs with eggs if your preparation is too dry and by adding breadcrumbs if your preparation is too moist.
