Chicken and broccoli couscous

Couscous, chicken, broccoli florets and dried cranberries; add lemon and spices to this mixture, and you have a nutritious dish with an exotic touch, ready in just a few minutes!

  • Ingredients

    • 375 ml (1½ cups) couscous
    • 500 ml (2 cups) water
    • 450g (1 lb) cooked chicken breasts, cut into 1cm x 1cm cubes
    • 500 ml (2 cups) broccoli cut into small florets
    • 2 green onions, chopped
    • 250 ml (1 cup) dried cranberries
    • 45 ml (3 tbsp) olive oil
    • The juice of half a lemon
    • 15 ml (1 tbsp) vegetable spices
    • Salt and pepper from the mill
  • Preparation

    1. In a saucepan, bring 500 ml (2 cups) of water to a boil. Remove from heat, add 375 ml (1½ cups) of couscous, cover and let stand for 3 minutes. Fluff with a fork and place in a large bowl.
    2. Add all other ingredients and mix well. Serve hot or cold.
