Chicken croquettes and honey sauce
Ingredients
For the croquettes:- 450 g (1 lb) boneless, skinless chicken breasts
- ½ cup (125 ml) all-purpose flour
- 2 eggs
- 4 cups (1000 ml) barbecue chips
- Ground pepper to taste
- ¼ cup (60ml) olive oil
- ¼ cup (60ml) mayonnaise
- ¼ cup (60 mL) plain Greek yogurt
- 1 C. (15 ml) Dijon mustard
- 2 tbsp. (30 ml) honey
- Salt and pepper from the mill
Preparation
- Cut the chicken into 2cm x 2cm cubes
- In a bowl, coat the chicken with flour and set aside.
- In another bowl, beat the eggs and set aside.
- Using a food processor, grind the chips into crumbs. Place in a bowl and season with pepper to taste.
- Dip each piece of chicken in the eggs and then in the chip crumbs.
- In a skillet over medium-high heat, heat the oil and cook the chicken nuggets for 15 minutes or until cooked through. Turn regularly during cooking.
- In a small bowl, combine all the ingredients for the sauce. Season with salt and pepper to taste and serve with the croquettes.
