Carrot Cupcakes with Honey Frosting

  • Ingredients

    • ½ cup honey
    • ½ cup canola oil
    • 2 eggs
    • ¾ cup all-purpose flour
    • ¼ cup whole grain flour (spelt, kamut or other)
    • 1 tsp baking powder
    • 1 pinch of salt
    • 1 vanilla pod
    • 1 cup finely grated carrots

    Frosting:

    • 1 cup cream cheese
    • 1/3 cup creamed honey
    • 1 pinch of nutmeg
  • Preparation

    1. Preheat oven to 375F.
    2. In a bowl, mix the honey, oil and eggs.
    3. Add the dry ingredients, then the carrots. Mix well.
    4. Spoon into small muffin tins and bake for about 15 minutes or until a toothpick inserted in the center of a cupcake comes out clean.
    5. Mix all the frosting ingredients and spread on the cupcakes.
