Sweet pancakes with vegetables
Ingredients
- 1 1/2 t. whole wheat or all-purpose flour
- 1 t. rolled oats
- 1/4 t. cocoa powder
- 1 C. baking powder
- 1 pinch of salt
- 3/4 t. butter, softened
- 1 t. brown sugar
- 2 eggs
- 1/2 t. cream or milk
- 1 C. vanilla essence
- 1/2 t. grated carrots
- 1 t. grated zucchini
- 1 t. dark or white chocolate chips
Procedure
- Preheat the oven to 375 degrees F.
- In a bowl, place the flour, rolled oats, cocoa powder, baking powder and salt.
- In another bowl, whisk the butter and brown sugar for 1 minute. Add the eggs, milk (or cream) and vanilla and mix well.
- Stir the dry mixture into the wet mixture.
- Stir in carrot, zucchini and chocolate chips. Mix well.
- Using a spoon, spread the equivalent of 3 tbsp. (one golf ball) mixture per patty on two nonstick baking sheets. Leave at least 3 cm between each pancake.
- Flatten slightly with a fork.
- Bake for 20 minutes or until a toothpick inserted in the center of a pancake comes out clean.
