Rice with stuck peas (Haitian rice)

This recipe from Haitian culture combines rice with red beans, garlic and spices, and will be perfect as an accompaniment to a meat of your choice!

Freeze for three months

  • Ingredients

    • 3 tbsp (45 ml) butter
    • 1 chopped yellow onion
    • 2 cloves garlic, chopped
    • 2 cups (500 ml) canned red beans with juice
    • 3 cloves
    • 1 tsp (5 ml) dried thyme
    • 1.5 liters (6 cups) chicken broth
    • 2 cups (500 ml) long grain rice
    • 1 hot pepper (optional)
    • Salt and pepper to taste
  • Preparation

    1. In a saucepan, heat the butter and brown the onion and garlic for 3 minutes.
    2. Add all other ingredients.
    3. Cook, uncovered, over low heat for about 20 minutes or until rice is cooked through and liquid is absorbed. Add more chicken broth if needed.

Replace 2 cups (500 ml) chicken broth with 2 cups (500 ml) coconut milk.
