Meatloaf with Sundried Tomatoes and Parmesan Sauce

A tasty meatloaf that can be prepared in just a few minutes, topped with sun-dried tomatoes and served with a creamy parmesan sauce!

Freeze for three months.

  • Ingredients

    • 1 lb (450g) lean ground beef
    • 1 egg
    • 60 ml (¼ cup) finely chopped sun-dried tomatoes
    • 60 ml (¼ cup) breadcrumbs
    • 15 ml (1 tbsp) dried Italian herbs
    • Butter to grease the mold
    • 180 ml (¾ cup) 15% cooking cream
    • 125 ml (½ cup) grated Parmesan cheese
    • Salt and pepper from the mill
  • Preparation

    1. Preheat oven to 400F.
    2. In a bowl, mix beef, egg, sun-dried tomatoes, breadcrumbs, Italian herbs, salt and pepper. Set aside.
    3. Butter a loaf pan, place the beef mixture and press down well.
    4. Bake for 40 minutes, covered.
    5. Just before serving the meatloaf, in a skillet, gently heat the cream and Parmesan until the latter is melted. Salt and pepper to taste.
    6. Drizzle the meatloaf with Parmesan sauce when serving.

Notes and tips

Add ¼ cup (60 ml) sliced Kalamata olives to the beef mixture.
