Cake with apples

Don't know what to do with your many apples? This cake with a touch of cinnamon that can be prepared in just 15 minutes will allow you to cook them into a delicious snack perfect for those late afternoon cravings!

  • Ingredients

    • 375 ml (1½ cups) all-purpose flour
    • 2.5 ml (½ tsp) baking powder
    • 1 pinch of salt
    • 2.5 ml (½ tsp) ground cinnamon
    • 60 ml (¼ cup) canola oil
    • 180 ml (¾ cup) lightly packed brown sugar
    • 2.5 ml (½ tsp) vanilla essence
    • 2 eggs
    • 2 small apples, peeled and cut into small ½ cm x ½ cm cubes
  • Preparation

    1. Preheat oven to 375F.
    2. Butter a 9 x 5-inch (23 x 13 cm) loaf pan and line it with a strip of parchment paper, leaving it hanging over two sides.
    3. In a bowl, mix flour, baking powder, salt and cinnamon. Set aside.
    4. In another bowl, using an electric mixer, beat the oil with the brown sugar and vanilla until smooth. Add the eggs, and mix again.
    5. Add the dry ingredients.
    6. Using a wooden spoon, stir in the diced apple.
    7. Place the mixture in the buttered bread pan.
    8. Bake for about 40 minutes or until a toothpick inserted in the center of the dough comes out clean.
    9. Let cool completely on a wire rack before unmolding and slicing.

Notes and tips

Add 2.5 ml (1/2 tsp) of ground ginger at the same time as the cinnamon.
