Carrot and date bread
Ingredients
- 500 ml (2 cups) all-purpose flour
- 5 ml (1 tsp) baking powder
- 125 ml (½ cup) unsweetened applesauce
- 60 ml (¼ cup) canola oil
- 375 ml (1½ cups) grated carrots
- 2 eggs
- 125 ml (½ cup) Medjool dates, chopped
- 125 ml (½ cup) dark chocolate chips
Path to follow
- Preheat the oven to 375F.
- In a bowl, combine flour and baking powder.
- In another bowl, mix the rest of the ingredients except dates and chocolate. Pour over the flour mixture.
- Stir the dry mixture into the wet mixture using a wooden spoon until smooth.
- Add dates and chocolate and mix again.
- Pour into a loaf pan then place in the center of the oven for about 45 minutes or until a toothpick inserted in the center of the loaf comes out clean.
For adventurers
Add 5 ml (1 tsp) of ground cinnamon to the flour mixture.
