Meal plate au gratin

Freeze for three months.

  • Ingredients

    • 4 medium russet potatoes, washed and cut into small 1cm x 1cm cubes
    • 1 cup small broccoli florets
    • 1 red pepper, roughly chopped
    • 1 red onion, coarsely chopped
    • ¼ cup olive oil
    • 1 tbsp Italian seasoning (or your favorite spices)
    • Salt and pepper from the mill
    • 2 cups leftover cooked meat, coarsely chopped
    • 2 cups grated cheese
  • Preparation

    1. Preheat oven to 375F.
    2. In a large bowl, combine potatoes, olive oil, spices, salt and pepper.
    3. Place on a baking sheet and bake for 20 minutes. Add the broccoli, bell pepper and red onion and continue baking for another 15 minutes or until all the vegetables are tender.
    4. Top with grated cheese and bake for another 5 minutes or until cheese is melted.

When ready to serve, top with ½ cup coarsely crumbled BBQ chips.
