Yogurt with fruits and vegetables on the bottom

Yogurt with vegetables? Why not! This mix of carrots and applesauce, topped with a little brown sugar and served with vanilla yogurt will certainly please even the pickiest palates!

  • Ingredients

    • 2 medium carrots (about 2 cups), very finely grated
    • 125 ml (½ cup) water
    • 125 ml (½ cup) brown sugar
    • 1 pinch of nutmeg
    • 250 ml (1 cup) applesauce
    • 500 to 750 ml (2 to 3 cups) plain or vanilla Greek yogurt
  • Preparation

    1. In a saucepan, bring carrots, water, brown sugar and applesauce to a boil. Reduce heat to medium-low and simmer for 20 minutes or until carrots are tender and liquid is syrupy. The finer the carrots, the less time they will take to cook.
    2. Cool carrot jam completely. Spoon 30 ml (2 tbsp) into small snack jars. Top with Greek yogurt and enjoy!
