Orzo salad

A tasty salad topped with sun-dried tomatoes, feta cheese, Kalamata olives and red pepper, perfect for a picnic in the sun or to slip into the kids' lunch box!

  • Ingredients

    • 2 cups (500 ml) orzo
    • ½ cup (125 ml) chopped sun-dried tomatoes
    • ¼ cup (60 ml) olive oil
    • ½ cup (125 ml) coarsely crumbled feta cheese
    • 3 tbsp (45 ml) pitted and sliced ​​Kalamata olives
    • 1 small red pepper, chopped
    • 2 green onions, chopped
    • Salt and pepper from the mill
  • Preparation

    1. In a pot, bring water to a boil and cook pasta according to manufacturer's instructions. Drain and place in a large bowl.
    2. Add all other ingredients and mix well. Salt and pepper to taste.
