Orzo salad
Ingredients
- 2 cups (500 mL) orzo
- ½ cup (125 mL) chopped sun-dried tomatoes
- ¼ cup (60ml) olive oil
- ½ cup (125 mL) coarsely crumbled feta cheese
- 3 tbsp. (45 mL) pitted and sliced Kalamata olives
- 1 small chopped red pepper
- 2 chopped green onions
- Salt and pepper from the mill
Preparation
- In a pot, boil water and cook the pasta according to the manufacturer's instructions. Drain and place in a large bowl.
- Add all the other ingredients and mix well. Add salt and pepper to taste.
For adventurers:
Add ½ cup (125 mL) chopped marinated artichokes.
